Quick Chicken Dinners #1: Chicken Breasts and Veggies

– 4 Skinless and boneless chicken breasts
– 2 Cups of broccoli florets
– Chopped carrots of medium sized
– 1 tbsp of chopped oregano
– 1/4 cup of dried tomatoes, snipped
– 1/4 cup of chicken broth

This is a great quick chicken dinners perfect for a meal for 2 and is cooked in 15 minutes. First season the chicken with pepper and salt. Heat up a pan under medium-high heat and coat with butter. Cook the chicken until slightly brown for 6 minutes, with only 1 turn. Leave chicken on a separate plate and add your chopped oregano and dried tomatoes onto the chicken. This gives your chicken some more flavors. Before returning the chicken back to the pan, add chicken broth and let it boil. Return the chicken back to the pan, reduce the heat and let it cook for another 8 minutes. Be sure to check if chicken is still pink. At the same time, work on your veggies by adding them in boiling water and leave until tender. Place chicken and veggies on serving plate and add in your chicken sauce from pan.

Quick Chicken Dinners #2: Balsamic Chicken Thighs


– 1 Orange
– 1 lb. Chicken thighs
– 2/3 cup  cinnamon applesauce
– 1/4 cup  balsamic vinegar
– 2 tsp.  vegetable oil
– Fresh asparagus and thyme

Here is another quick chicken dinners that is great if you’re looking for tastes other than salty. This balsamic sauce will be very sweet and tangy. First, juice the orange and save the peel for later use. In a saucepan, place applesauce, balsamic vinegar and the orange juice. Also, add in some salt and pepper to your taste and bring the sauce to a boiling point. Cook it while reducing the heat and keep it under cover to preserve warmth. Next, work on the chicken by seasoning with 1/2 tbsp of salt and black pepper. Place vegetable oil in a pan under medium-high heat and cook chicken until golden brown on the bottom and flip it once. Add in your sauce and cook fully. Place your asparagus and thyme in boiling water until tender. Place asparagus on serving plate and add in some balsamic sauce. Quick Chicken Dinners #3: Buffalo Chicken Salad


– 25-oz. pkg.  frozen buffalo-style boneless chicken wings
– 2 hearts of romaine lettuce, halved or quartered
– 1-1/2 cups  sliced celery and/or carrots
– 3 tablespoons  light mayonnaise
– 2 tablespoons  mango chutney, chopped
– 2 small  lemons
– 2 tablespoons of sliced almonds

For this quick chicken dinners, prepare chicken as per instructions and cook well. Start lining a plate with romaine lettuce, celery and carrots. For sauce, mix mayonnaise, mango chutney, and squeezed lemon juice in small bowl. Stir well. Cut your chicken into portions. Squeeze some more lemon juice onto lettuce and leave lemon slices on plate. Place your chicken slices evenly on to plate and serve.
